Don't limit this to salmon. Try other cuts of fish.
You won't believe how easy this is. You'll cry because you missed all those years of eating this.
Ridiculously easy Salmon (or other fish)
For the fish:
- 4 portions of salmon filet, cleaned and stray bones removed
- Sea salt
- Handful of rosemary, chopped
- 1/2 cup dry white wine or Champagne
For the sauce:
- the pan juices
- 1/2 cup heavy cream
Preheat the oven to 350F
Bake the fish: Lay the salmon in a buttered shallow heatproof dish. Season with a little salt and arrange the rosemary on top, then pour the wine over. Cover with a sheet of aluminum foil and cook in the preheated oven for 15 minutes. It will be done if it flakes apart with a fork.
Make the Sauce: Transfer the salmon to a warm place and pour the juices into a saucepan. Bubble the juices over medium heat until reduced by half, then add the cream and reduce again or add a couple of pats of butter to finish the sauce.
To serve: Lay the salmon on warm plates and pour the sauce around. Serve immediately.
