When I first tried pea soup, I almost barfed. Yuck. Then I tried it as an adult. Barfy again.
That is until I made it myself. I kept it simple and only used a few ingredients that you probably already have in your pantry.
Here's your chance to dust off that pressure cooker. This is fast. Really fast and really good.
Sharee's Split Pea Soup
- 2 T olive oil
- 1 onion diced
- 1 lb green split peas
- 3 garlic cloves, peeled and left whole
- 1 heaped tsp. ground cumin
- 6 cups chicken or vegetable broth
- 1 T soy sauce
- Tabasco sauce, to taste
- salt and pepper to taste
Heat oil in a pressure cooker pan and fry the onion until soft. Add the split peas, garlic, cumin, and stock and cook under medium pressure for 10 minutes.
Blend the soup with an immersion blender until smooth. (You can use a conventional blender, but be very careful not to burn yourself.)
Add the soy sauce and season with Tabasco, salt and pepper to taste.
Serve with some crusty bread and a crisp salad.
